Ingredients
- 4 x Ears grilled corn
- 2 x Poblano peppers, roasted
- 1 x Red pepper, roasted
- 2 x Tomatoes, minced
- 1/4 c. Cilantro, minced
- Â Â Juice of one lime
- 1 Tbsp. Extra virgin olive oil
- 1/4 lb Cheese, grated
- 8 x Tortillas
- 3 x Zucchini, sliced lengthwise
- 3 x Yellow squash, sliced lengthwise
- 3 x Roasted peppers, different colors,
- Â Â Sliced
- 1 x Eggplant sliced
- 1/4 c. Minced basil
Directions
- In large bowl combine all ingredients except cheese and tortillas. Place one tortilla on plate, layer salsa mix, and cheese, top with another tortilla and top with salsa. Serve.
