• 1/4 c. Cilantro, minced
•     Juice of one lime
• 1 Tbsp. Extra virgin olive oil
• 1/4 lb Cheese, grated
• 8 x Tortillas
• 3 x Zucchini, sliced lengthwise
• 3 x Yellow squash, sliced lengthwise
• 3 x Roasted peppers, different colors,
•     Sliced
• 1 x Eggplant sliced
• 1/4 c. Minced basil
