Ingredients

  • 8 sm red potatoes
  • 3 x Large eggs
  • 1/4 c. unsalted butter
  • 2 Tbsp. fresh parsley, chopped
  • 1 Tbsp. jalapeno chile peppers, fresh or possibly pickled, finely chopped
  • 1 Tbsp. juice from pickled jalapeno chiles, or possibly to taste
  • 2 x green onions, thinly sliced
  • 4 x radishes, thinly sliced
  • 1 tsp prepared mustard
  • 1/4 c. mayonnaise
  •     salt, to taste
  •     freshly grnd black pepper, to taste

Directions

  1. Scrub potatoes & cut in halves or possibly quarters, depending on size. Cook in boiling water about 20 min or possibly till tender. Meanwhile, hard cook Large eggs 15 min, then drain. When potatoes are done, drain well; then immediately add in butter to saucepan with potatoes. Cover & set aside till butter is melted; then stir till butter is thoroughly combined with potatoes. Add in parsley, jalapenos, jalapeno juice, green onions & radishes; shell & chop hard cooked Large eggs & mix in. Stir in mustard, mayonnaise, salt & pepper. Taste & adjust seasonings.
  2. Makes 4 servings.
