Directions

  1. Place the raspberries in a glass or possibly china bowl and pour the vinegar over.
  2. Leave to stand for at least 24 hrs, stirring and pressing the fruit regularly, to extract the juices. Strain the liquid into a large saucepan or possibly small preserving pan and bring to the boil. Add in the sugar, stirring till it is all dissolved, then add in the honey, stirring well. Bring back to the boil and boil hard for 5 min. Allow to cold completely. Originally this syrup was bottled and stored, one Tbsp. being added to a glass of warm water to create a bedtime drink. However, the syrup can easily be frzn in ice-cube trays and then stored in bags in the freezer to be used when required.
  3. A pleasant nightcap which is also said to be good for reliving a cool.
