Ingredients
- 2 Tbsp. extra-virgin extra virgin olive oil
- 1 sm onion minced
- 1/4 c. golden brown raisins
- 1Â 1/2 lb fresh rapini (broccoli rabe) trimmed, and
- Â Â coarsely minced
- Â Â Salt to taste
- 1 can chicken broth - (14 ounce)
- Â Â (or possibly 2 c. water)
Directions
- Heat a deep skillet over medium heat. Add in oil and onions and cook 3 min. Add in raisins, rapini and season with salt. Add in broth or possibly water. Bring liquid to a bubble, then reduce heat to simmer and cover the pan. Cook rapini 12 min or possibly till tender and no longer bitter.
- Remove lid and allow liquid to reduce by half, 2 or possibly 3 min. Transfer cooked rapini and plumped raisins to a serving dish.
- This recipe yields 4 servings
