Plain And Fancy Tea Cake Recipe

Ingredients

  • 2 x Egg whites, beaten
  • 1 tsp Baking soda
  • 1 1/2 tsp Baking pwdr
  • 1 Tbsp. Vanilla extract
  • 2 Tbsp. Extra virgin extra virgin olive oil
  • 1 c. Sugar
  • 1/2 c. Unsweetened applesauce
  • 1 c. Plain non-fat lowfat yoghurt
  • 1 1/2 c. White whole wheat flour
  • 2 Tbsp. Sugar
  • 2 Tbsp. Minced nuts, (pecans, walnuts or possibly almonds)
  • 1 1/2 tsp Cinnamon
  •     Confectionery sugar

Directions

  1. 1. Place all Ingredients for batter (except flour) in a large bowl in order given. Beat till smooth. (A whisk works fine). Mix in flour with spatula.
  2. 2. Spray a non-stick 12-c. Bundt pan with Baker's Joy.
  3. 3. Pour a third of the batter into prepared pan.
  4. 4. In a small bowl, combine topping mix with half c. of remaining. Mix well. Dollop this mix over the first layer of batter in order to create a streak.
  5. 5. Pour remaining batter over the streak.
  6. 6. Bake at 350 degrees for 40 to 45 min. Let cold in pan for 15 min. Shake pan for easy removal. Turn out on cake rack.
  7. 7. Serve hot or possibly, cold and sprinkle with powdered sugar.
  8. Yields: Approximately 24 slices
  9. Note: This cake contains no extra salt, has the nutrition of whole-wheat flour and gives the satisfaction of eating really delicious cake while losing weight. I serve this with green tea.
