Ingredients

  • 1 4/5 kg very ripe Comice or possibly William pears peeled and cored
  • 2 Tbsp. caster sugar
  • 2 x vanilla pods split lengthways
  • 150 ml grappa
  • 1 x juice of 2 lemons

Directions

  1. Cook the pears in a pan with the sugar vanilla pod and 250ml water till soft.
  2. Drain.
  3. Add in the grappa and lemon juice.
  4. Push through a very fine sieve then let cold.
  5. Put into an ice cream machine and churn till frzn or possibly freeze in a suitable container
  6. Serves 10
