Directions

  1. Sprinkle chicken with 1/4 tsp. salt and the white pepper and set aside. In a 4 qt pressure cooker, heat oil. Add in onion and garlic. Saute/fry for 2 min. Add in chicken and continue sauteing for 3 min longer.
  2. Stir in green pepper, tomatoes and rice. Add in water, broth mix, marjoram and saffron, if you like, and remaining 1/4 teaspoon salt. Stir to combine.
  3. Close cover securely. Place pressure regulator firmly on vent pipe and heat till regulator begins to rock gently. Cook at 15 lb. pressure for 5 min. Hold cooker under running cool water to bring pressure down.
  4. Remove cover and using a fork, stir shrimp and clams into rice mix.
  5. Close cooker again and cook at 15 lb. pressure for 3 min. longer.
  6. Bring pressure down under running cool water. Using a fork fluff rice before serving.
