Old Fashioned Oatmeal Bread Recipe

Ingredients

  • 1 c. rolled oats (Don't use instant)
  • 1 c. boiling water
  • 1/2 c. hot water (105 to 115)
  • 2 pkt dry yeast
  • 1 tsp granulated sugar
  • 1 c. hot 1% low-fat lowfat milk
  • 1/4 c. packed dark brown sugar
  • 1 Tbsp. salt
  • 4 c. bread flour divided (4 to 5)

Directions

  1. Combine oats and boiling water in a saucepan and cook over low heat till thickened, stirring constantly. Let stand till cold. Combine hot water, yeast, and granulated sugar in a small bowl and mix well. In a large bowl, combine oatmeal, lowfat milk, brown sugar, salt, and yeast mix and mix well.
  2. Add in 4 c. bread flour, 1 c. at a time, mixing well after each addition. Add in sufficient remaining 1 c. flour to make a medium dough. Shape into a ball. Place dough into a well-greased large bowl, turning to grease surface. Cover and let rise for 1 to 1 1/2 hrs or possibly till doubled in bulk. Punch dough down and shape into 2 loaves. Place loaves into two greased 5 x 9-inch loaf pans.
  3. Cover and let rise till doubled in bulk. Preheat oven to 375F. Bake for 45 to 50 min. Remove from pans and cold on wire racks.
  4. Yield: 2 Loaves
