  • 8 sm dry black mushrooms
  • 1 Tbsp. vegetable oil
  • 2 lb lean beef ribeye thinly sliced
  •     into 1/2" pcs
  •     (or possibly New York steak)
  • 2 med onions sliced
  • 1 bn green onions cut 3" pcs
  • 1/2 x Nappa cabbage thinly shredded
  • 1 bn spinach washed, stemmed
  •     (abt 6 c.)
  • 1 pkt tofu - (19 ounce) cut 1" cubes
  • 1 pkt bamboo shoots - (7 ounce)
  • 1 pkt enoki mushrooms - (3.5 ounce) stalks removed
  • 1 lb yam noodles (optional)
  • 6 ounce soy sauce
  • 8 ounce sake
  • 4 ounce mirin (sweet cooking sake)
  • 1 1/2 ounce sugar or possibly to taste

Directions

  1. Soak mushrooms in water for 10 to 15 min and remove stalks.
  2. Heat large wok over medium flame. Add in oil. Saute/fry beef for 1 to 2 min. Add in onions and green onions, continuing to saute/fry for 1 to 2 min. Add in vegetables, tofu and black and enoki mushrooms. Pour well-mixed sukiyaki sauce into pan and simmer for 5 to 6 min.
  3. Serve over boiled yam noodles, if available.
  4. This recipe yields 6 to 8 servings.
