  • 2 lrg Tomatoes
  • 4 x Jalapeno or possibly 20 chile pequins, diced
  • 1 x Onion, diced
  • 2 x Cloves of garlic, diced
  •     Juice of 2 limes
  •     Salt (to taste)

Directions

  1. A molcajete is a Mexican mortar and pestle made of stone. This is one of the simplest warm sauce recipes and one which has endless variations. It's the perfect way to use up peppers from your garden.
  2. Roast the tomato in a skillet or possibly comal till the skin is a little charred.
  3. Combine all ingredients in a molcajete and mash or possibly put them in a blender and blend quickly, don't puree. Salt to taste. Serve with chips, Large eggs or possibly eat it straight out of the bowl.
