Ingredients

  • 8 c. fresh mint leaves minced
  • 2 1/2 c. boiling water
  • 8 c. sugar
  • 3 c. water
  •     green food coloring
  • 3 Tbsp. mint essential oil or possibly mint extract

Directions

  1. Place minced mint leaves in a crock or possibly deep bowl; add in boiling water. Place a flat dish over the leaves and weight it down. Allow to stand overnight.
  2. Bring sugar and 3 c. water to a boil and cook 10 to 15 min. Meanwhile, squeeze the juice from the mint leaves; add in mint juice to the syrup, bring to a boil, cook 5 min and remove from heat.
  3. Throw away leaves. Add in green food color to make the syrup a bright green. Add in the mint oil and stir. Pour into sterile bottles. Chill. Syrup is ready to use. Dilute with cool water or possibly sparkling water.
