Mini Meatloaves Recipe

I held out as long as I could. I really did. I had to make meatloaf for our “Food from the Heartland” month. It is the ultimate comfort food to me on a cold winter evening and one of my favorite meals, usually with mashed potatoes and green beans. The perfect combination. This time I decided instead of making a whole meatloaf I would make mini loaves. They turned out great and just enough for each person to have their own for dinner. My recipe is a pretty basic one but it always turns out wonderful and flavorful!

Directions

  1. In a large bowl combine bread crumbs, onion, salt, black pepper, and 2 tablespoons of the tomato sauce. Mix well to combine all the ingredients. Divide the mixture evenly between two mini loaf pans. Drizzle the remaining 2 tablespoons of tomato sauce evenly over the two loaves. Place the pans on a cookie sheet and place in a 350 degree oven and bake for 35 minutes. Serves 2.

    My husband and I sure did. Took less time than a big meat loaf to bake too. Good for a quick evening meal.
