  • 4 sm artichokes
  • 1 x lemon, juice of
  • 6 c. chicken stock **
  • 6 Tbsp. butter, unsalted
  • 4 lb garlic, cloves, finely minced
  • 1/4 tsp salt pepper, black, grnd
  • 1 Tbsp. parsley, minced
  • 1/2 c. peas, fresh or possibly frzn cheese, parmesan, grated cheese, pecorino, grated (opt)

Directions

  1. Trim off all of the tough outer leaves from the artichokes. Cut off the tops of the artichokes, trim and peel the bottoms, leaving a little of the stem.
  2. Quarter the artichokes. (If using larger artichokes, scrape away the fuzzy choke.) Toss with lemon juice.
  3. Heat the chicken stock to a simmer in a medium saucepan.
  4. In a skillet, heat the butter over medium-high heat. Add in the artichokes, garlic, and salt and pepper to the skillet. Saute/fry, tossing, for 5 min.
  5. Using a slotted spoon, transfer the cooked artichokes and garlic to the simmering stock. Add in parsley and simmer, covered, for 15 min. Uncover, add in peas and simmer for 5 min longer. Serve warm with grated Parmesan or possibly pecorino cheese.
