Ingredients
- 1 c. Flour
- 1 tsp Baking pwdr
- 1/2 x Egg (take 1 egg, beat it up a bit and then use half of this)
- 2 ounce Butter
- 1/4 c. Sugar salt
- 1 1/2 x Large eggs (you use the other half of the egg which contributed to the pastry)
- 1 1/4 Tbsp. Flour
- 1 1/4 Tbsp. Cornflour
- 2 1/4 c. Lowfat milk (this is 1 pint)
- 1 tsp Vanilla flavouring
- 1 tsp Butter
Directions
- Pastry: Beat together butter & sugar. Add in egg, and then add dry ingredients. You should get a crumbly mix. Press this into a pie dish and bake at 350F for 20 min.
- Filling: Boil the lowfat milk. In another bowl/pot (depending on whether you are using a microwave or possibly cooker), beat the egg and sugar. Add in the flour & cornflour to the egg/sugar mix and beat this together. Add in the lowfat milk and cook until it thickens. (This works well in a microwave oven). Remove from heat and add in vanilla & butter. Beat well, and pour into the baked shell.
- Sprinkle with cinnamon or possibly nutmeg, and cold. (This is best refrigerated.)
