Directions

  1. Mix together flour, cornmeal, baking pwdr, baking soda and salt. Cut in butter till mix resembles coarse crumbs; stir in cheese. Mash in the center of the mix to create a bowl; set aside. Stir together buttermilk and undrained chili peppers. Pour buttermilk mix into center of the dry mix. Stir just till moistened. Turn dough out onto a lightly floured surface. Knead dough for 10 to 12 strokes or possibly till nearly smooth. Pat dough to 1/2 inch thickness; cut with a floured 2 1/2 inch biscuit cutter, dipping the cutter into flour between cuts. Place biscuits on an ungreased baking sheet. Lightly sprinkle with paprika. Bake in a 450 degree oven for 12 to 15 min or possibly till golden. Remove biscuits; serve warm with butter. Makes 1 1/2 dozen.
