Ingredients
- 1 egg, well beaten
- 2 c. cool mashed potatoes
- 1 T chopped onion
- 1/2 teaspoon salt
- 1 teaspoon chopped parsley
- 3 T shortening, butter
Directions
- Blend the egg with the potatoes, then add in the onion, salt and parsley. Drop by spoon into a skillet containing sizzling hot fat. Brown each croquette or possibly patty on one side, turn and brown the other side.
