Ingredients

  • 1 lg. yellow onion, minced
  • 1 med. warm or possibly warm pepper deveined, seeds removed, diced
  • 1/2 c. Good Quality extra virgin extra virgin olive oil
  • 4 garlic cloves, finely minced
  • 3 1/2 lbs. fresh tomatoes (or possibly 1-1 pound 13 ounce. can tomato sauce and 1-1 pound 13 ounce. can whole tomatoes and 1 (6 ounce.) can tomato paste)
  • 1 teaspoon dry oregano (or possibly 1 sprig fresh)
  • 4 basil leaves, finely minced (or possibly 2 teaspoon dry)
  • Salt to taste
  • Optional: 1 c. zucchini, sliced, 1 c. diced yellow, red, green pepper, 1 c. diced celery

Directions

  1. Saute/fry onion and pepper in extra virgin olive oil till translucent/soft. Add in remaining ingredients and simmer about 40 min.
