Low Country Shrimp Boil Recipe

Ingredients

  • 16 c. water
  • 1/4 c. Old Bay Seasoning or possibly crab boil seasoning
  • 3 tsp grnd red pepper
  • 2 lb cooked smoked sausage, cut in 1 1/2 in. chunks
  • 2 lb tiny new potatoes, halved if large
  • 10 sm onions, peeled (about 3 lbs.)
  • 5 x fresh ears of corn, shucked and halved
  • 2 lb fresh or possibly frzn large shrimp in shells
  • 1/4 c. butter, melted (optional)
  • 1/4 c. snipped fresh herbs, such as thyme, oregano, and/or possibly basil (optional) cocktail sauce (optional) bottled warm pepper sauce (optional)

Directions

  1. 1. In a 10-qt Dutch oven combine water, Old Bay seasoning, and grnd red pepper. Cover and bring to boiling. Once water is boiling, carefully add in sausage, potatoes, onions, and corn. Return to boiling; reduce heat. Cover and simmer for 10 min. Add in shrimp. Cover and cook for 2 to 3 min more or possibly till shrimp turn opaque. Remove from heat; let stand for 5 min.
  2. 2. Carefully drain in a large colander. Combine melted butter and herbs; drizzle over shrimp and vegetables. Serve with cocktail sauce and warm pepper sauce.
  3. Makes 10 servings. (I cut this recipe in half for just 2 people and there was still plenty of leftovers.)
