Kid's Favorite Taco Casserole Recipe

Occasionally I babysit for the neighbor's kids. i found this recipe in a church cookbook years ago and thought it sounded good. I made it for the kids for dinner and they LOVED it.

Directions

  1. Preheat oven to 350 degrees. Place half of the broken taco shells in a lightly buttered 1 1/2 quart casserole. In a large skillet, brown beef until crumbly. Drain. add taco mix and water. Simmer uncovered for 10 minutes. Stir in onion and tomato sauce. Spoon beef mixture over taco shells. Sprinkle with 1 1/2 cups of the cheese, the remainder of the taco shells and the remaining cheese. Top with tomato wedges and olives.Bake 15 to 20 minutes or until hot.

    I'm giving this a 3.5, mostly because the taco shells on the bottom got a little soggy which made it a little chewy. Other than that it was pretty good. My one year old loved it. But my 3 year old hated it. She's a pretty picky eater though. I think if I was to make it again I would eliminate the shells on the bottom and put refried beans in its place.
    I've cooked/tasted this recipe!
