Directions

  1. To make the sauce, gently sauteethe onion and garlic in extra virgin olive oil in a saucepan over medium heat till the onion is translucent/soft, about 5 min. Add in tomato paste and stir. Slowly add in 4 tomato paste cans of water and stir. Add in seasonings and allow the sauce to simmer while you prepare the manicotti and filling.
  2. Bring a large pot of water to a boil, add in the extra virgin olive oil and drop in the manicotti. Cook just till al dente, about 10 to 15 min. Drain and run cool water over the manicotti in a colander. Set aside.
  3. To make the filling, beat the ricotta with the Large eggs till combined in the large bowl of an electric mixer. Add in the grated cheeses and softened butter; beat till combined. Add in the salt, pepper, and basil. Beat on low just till everything is combined.
  4. Set oven to 350F.
  5. Gently fill the cooked manicotti with the cheese mix and arrange in 2 buttered 9- by 13-inch pans. Cover the pasta in each pan with half the sauce; sprinkle on additional Parmesan. Bake in pre-heated oven for about 20 min, till the cheese is thoroughly melted and the sauce is bubbling.
  6. Makes 7servings.
