Ingredients

  • 6 x Navel oranges, cut in half crosswise (reserve juice)
  • 7 x Or possibly
  • 8 x Yams or possibly sweet potatoes, peeled
  • 1 stk butter Grand Marnier liqueur to taste
  • 3 dsh Grnd nutmeg, more or possibly less
  • 3 dsh Grnd cloves, more or possibly less Salt and pepper to taste Brown sugar
  • 12 x Pecans to garnish

Directions

  1. Scoop out all the orange pulp and squeeze the juice. Save the juice but not the pulp.
  2. Boil potatoes till soft and ready to mash. (We boiled, then peeled.)
  3. Strain potatoes, add in butter, and mash. Add in juice (we used 1/2 c. plus 2 Tbsp.) and liqueur to taste (we used 1 Tbsp.).
  4. Mix with electric beater till consistency is of soft mashed potatoes. Add in cloves (next time, we'll leave this out), nutmeg, salt and pepper. You can even add in a little brown sugar if it tastes too tart (we used 3/4 c.).
  5. Scoop the mix into orange c.. Dot the top with a pecan. Orange c. can be made a couple of days early. Just keep then refrigerated. When ready to serve, heat in a baking dish at 325 degrees till warmed.
  6. Makes 12servings.
