Ingredients
- 3 med red bell peppers seeded. and coarsely minced
- 6 x jalapeno peppers
- 4 c. sugar
- 1 1/4 c. red wine vinegar
- 3/4 c. liquid fruit pectin
Directions
- In a heavy 2-qt saucepan over high heat, combine the peppers, jalapenos, sugar, and vinegar and bring to a boil. Reduce the heat to medium and simmer for 20 min, stirring every 5 min. Be careful not to let the mix boil over.
- Turn off the heat and add in the pectin, mixing well. Turn the heat on again to high and cook till the mix comes back to a boil. Pour into sterilized jars and seal according to the manufacturer's directions.
- This recipe yields about 6 c..
