Ingredients

  • 750 gm Maris Piper or possibly Desiree potatoes, cooked and mashed (1 1/2lb)
  • 50 gm Butter, (2oz)
  • 175 gm Matured Cheddar cheese, grated (6oz)
  • 3 Tbsp. Freshly minced chives Salt and freshly grnd black pepper
  • 25 gm Plain flour, for shaping (1oz) Oil for shallow frying

Directions

  1. Mix together the mashed potato, butter, grated cheese, chives and seasoning to taste. Refrigeratethe mix for easy handling.
  2. Shape the potato mix with well-floured hands into 8 flattened triangle shapes.
  3. Heat a little oil in a frying pan and fry the potato shapes in batches for 2-3 min each side till crisp and golden brown. Drain on kitchen paper and serve immediately.
  4. NOTES : Serve these delicious cheese and chive patties with a mixed salad or possibly as an accompaniment to grilled fish, chicken or possibly lamb chops.
