Heavenly Twice Baked Potatoes Recipe

This is a great basic recipe. Feel free to spice it up with additional mix-ins to your potatoes!

Directions

  1. Pre-heat oven to 350 place baking potatoes directly on oven rack and bake for 1hour 20minutes.
  2. Meanwhile, cover the bottom of a skillet with extra virgin olive oil.
  3. Add in onions to oil and sautee until tender (About 5 min)
  4. Remove onions from heat; drain excess oil. Add in onions to medium mixing bowl.
  5. When potatoes are done, take out of the oven and cut the top 1/4 off of each potato (the long way)
  6. Scoop potato out of the shell and into mixing bowl with the onions.
  7. Add in lowfat milk, butter, and pepper to mix.
  8. With mixer, combine ingredients till well blended. Add in cheese and mix with spoon.
  9. Place potato mix into a medium sized plastic bag. Twist bag (bag should appear as a pastry bag) with scissors, clip the corner off the end of the bag.
  10. Squeeze the potato into each shell. place on cookie sheet and bake another 20 min, or until cheese is melted and light brown crust forms on top of potatoes.

    This recipe looked great...but I changed it around a small bit, I added some garlic to the sauteed onions and added some bacon too!
