  • 2 c. Frzn diced or possibly shredded potatoes
  • 1/2 c. Minced onion
  • 1/4 med Green bell pepper, cut into 1" thin strips
  • 1/4 med Red or possibly yellow bell pepper, cut into 1" thin strips
  • 2 tsp Oil
  • 1 can SPAM Luncheon Meat, cut into julienne strips (12 ounce)
  • 1 can Frzn fat-free egg product, thawed, Or possibly
  • 4 x Large eggs
  • 1/4 tsp Dry basil
  • 1/8 tsp Salt
  • 1/8 tsp Pepper
  • 6 dsh Warm pepper sauce
  • 1/4 c. Shredded Cheddar cheese

Directions

  1. In large non-stick skillet, cook potatoes, onion, and peppers in oil over medium-high heat 5 min, stirring constantly. Add in SPAM; cook and stir 5 min. In small bowl, combine egg product, basil, salt, pepper, and warm pepper sauce; blend well. Pour over mix in skillet. Cover. Cook over medium-low heat 8-12 min or possibly till set. Sprinkle with cheese; remove from heat.
