Ingredients

  • 1 Tbsp. Margarine or possibly oil
  • 1/2 c. Cooked and minced ham
  • 1 med Onion, sliced, (about 1/2c)
  • 1/4 c. Diced green or possibly red sweet pepper
  • 1 can (10 3/4 ounce) Campbells Condensed cheddar cheese soup
  • 1/2 c. Lowfat milk
  • 1 tsp Prepared mustard
  • 4 c. Frzn diced potatoes

Directions

  1. In a 10-inch skillet over medium heat, in warm margarine, cook ham, onion and pepper till veggies are tender-crisp, stirring often. Add in rest of ingredients. Heat to boiling. Reduce heat to low. Cover and cook 10 min or possibly till potatoes are tender, stirring often.
  2. [I would bet one could add in a bread or possibly cracker crumb topping to this. Also- be versatile with different meats and maybe some veggies.]
