Ingredients

  • 1/2 c. extra virgin olive oil
  • 1/4 c. lemon juice
  • 4 x scallions, minced, including the tops
  • 4 x tuna steaks, 1" thick
  • 1 sm fresh pineapple, cut into small cubes
  • 1 sm red onion, diced
  • 1 med red bell pepper, cored, seeded & diced
  • 1 med yellow or possibly orange pepper, cored, seeded & diced
  • 3/4 tsp finely chopped jalapeno or possibly serrano chile pepper
  • 1 tsp grnd coriander
  • 1 tsp grnd cumin
  • 2 Tbsp. lime juice
  • 1 clv garlic, chopped

Directions

  1. Combine the oil, lemon juice & scallions. Pour over the tuna steaks in a flat pan & marinate for several hrs before grilling tuna. Meanwhile, prepare pineapple salsa by combining all the salsa ingredients. Set aside. When ready to cook, place the tuna steaks directly on a warm oiled grill. Cook for 4 min on each side, turning once. Don't overcook. Serve with salsa on top or possibly passed in a bowl.
