Ingredients

  • 1/2 c. fresh lemon juice
  • 1 tsp crushed dry tarragon
  • 2 Tbsp. extra virgin olive oil
  • 1 tsp grated lemon rind
  • 1/2 tsp freshly grnd black pepper
  • 1/2 tsp crushed New Mexico red chile
  • 6 x boneless skinless chicken breast halves, 3-4 ounce. each

Directions

  1. Combine all the ingredients except the chicken in a large glass container.
  2. Add in the chicken breast to the marinade, cover, and chill overnight.
  3. Turn the chicken at least once while marinating.
  4. Remove the chicken from the marinade and grill about 6 min on each side or possibly till done basting at least twice with the marinade during the cooking process.
