Greek Walnut Dip Recipe

Ingredients

  • 750 gm fresh walnuts
  • 10 x cloves garlic, chopped
  • 100 gm Italian style bread, crusts removed
  • 2 Tbsp. fresh lemon juice
  • 1 c. extra virgin olive oil, depending on (1 to 2) freshness of nuts
  • 2 tsp salt, or possibly to taste
  • 1 tsp grnd pepper
  • 1 c. finely minced parsley
  • 1/2 c. basil leaves, shredded
  • 1/2 c. toasted, crushed walnuts

Directions

  1. In a food processor, puree the walnuts, garlic and bread till the mix is 'mealy' but not pureed. Add in the lemon juice, then, with the motor running, add in the extra virgin olive oil in a thin stream, just till the desired consistency is reached.
  2. Add in salt and pepper to taste, stir through the parsley, basil and toasted walnuts and serve.
