.%20They%20spent%20long%20hours%20by%20the%20kiln%20making%20terracotta%20tiles%20and%20utensils%20and%20they%20took%20advantage%20of%20the%20heat%20from%20their%20ovens%20to%20slow%20cook%20the%20meat%20in%20pots%20placed%20just%20outside%20the%20kilns%20(hence%20the%20name%20Peposo%20alla%20Fornacina,%20as%20fornace%20is%20an%20Italian%20word%20for%20kiln).%3C/p%3E%3Cp%3EIn%20the%20area%20where%20my%20village%20is%20located,%20south%20of%20Siena,%20on%20the%20border%20with%20the%20Maremma,%20Peposo%20was%20usually%20eaten%20by%20wood%20charcoal%20burners.%20They%20would%20place%20their%20pots%20of%20Peposo%20on%20top%20of%20the%20turf%20piles%20under%20which%20the%20wood%20was%20slowly%20burning.%20In%20the%20woods%20which%20surround%20the%20village,%20some%20of%20the%20old%20wood%20charcoal%20burning%20sites%20are%20still%20visible%20in%20the%20growing%20underwood,%20and%20it%20is%20quite%20common%20to%20see%20pieces%20of%20broken%20terracotta%20pots%20scattered%20around%20the%20ground.%3C/p%3E%3Cp%3EPeposo%20is%20a%20very%20easy%20dish%20to%20prepare.%20It%20can%20be%20prepared%20either%20%20in%20a%20terracotta%20pot%20in%20the%20oven%20or%20in%20a%20pot%20with%20a%20heavy%20lid%20on%20the%20stove%20(that%20is%20what%20I%20do,%20which%20is%20also%20the%20traditional%20way%20around%20here).%20For%20this%20dish,%20you%20need%20a%20%E2%80%9Cpoor%E2%80%9D%20cut%20of%20meat%20rather%20than%20a%20tender,%20good%20quality%20cut,%20because,%20otherwise,%20the%20meat%20would%20melt%20in%20the%20slow%20cooking%20process.%20Traditionally,%20Peposo%20was%20made%20with%20scraps:%20the%20%E2%80%9Cworst%E2%80%9D%20pieces%20of%20beef%20meat%20that%20were%20relatively%20cheap%20to%20buy.%20Stewing%20steak,%20better%20if%20with%20a%20bit%20of%20fat%20or%20callosity,%20is%20usually%20ideal.%20If%20you%20can%20only%20find%20a%20good%20cut%20of%20beef,%20then%20it%E2%80%99s%20necessary%20to%20reduce%20the%20cooking%20time.%20With%20the%20right%20type%20of%20meat,%20you%20will%20typically%20need%203%20hours.%3C/p%3E%3Cp%3ERecipe%3C/p%3E%3Cp%3EPreheat%20the%20olive%20oil%20in%20a%20Dutch%20oven%20and%20briefly%20saut%C3%A9%20the%20garlic%20cloves.%20Add%20the%20peppercorns,%20the%20sage%20and%20the%20meat%20and%20sear%20for%205%20minutes,%20until%20the%20meat%20has%20a%20nice%20brownish%20colour%20on%20all%20sides.%20Pour%20in%20the%20wine,%20cover%20and%20let%20it%20simmer%20on%20very%20low%20heat%20or%20in%20the%20oven%20at%20150%20%C2%B0C%20(300%20F%C2%B0).%20%E2%80%A8When%20the%20wine%20starts%20to%20reduce,%20add%204%20cups%20(1%20lt)%20hot%20water%20and%20let%20simmer%20slowly%20for%202%20hours,%20checking%20regularly%20to%20see%20that%20the%20liquid%20has%20not%20evaporated%20completely.%3C/p%3E%3Cp%3EIf%20the%20liquid%20dries%20up,%20add%20some%20more%20water%20to%20cover%20the%20meat.%20After%202%20%E2%80%93%202%201/2%20hours,%20remove%20the%20lid,%20and%20let%20the%20liquid%20evaporate%20until%20the%20meat%20is%20left%20in%20a%20thick%20brown%20juice.%20There%20is%20usually%20no%20need%20to%20add%20salt.%3C/p%3E%3Cp%3ESome%20people%20add%20a%20few%20tomatoes%20to%20the%20meat,%20which%20results%20in%20a%20creamier%20dish.%E2%80%A8%20Il%20Peposo%20is%20best%20accompanied%20by%20a%20good,%20hearty%20red%20wine,%20and%20possibly%20a%20salad%20to%20compensate%20for%20the%20rich%20taste%20of%20the%20meat.%20Some%20people%20serve%20Peposo%20on%20stale%20or%20toasted%20Tuscan%20bread.%20If%20you%20choose%20to%20do%20that,%20don%E2%80%99t%20let%20the%20juices%20evaporate%20completely.%3C/p%3E%3Cp%3EBuon%20appetito!%3C/p%3E%3Cp%3EServes%202-3%3C/p%3E%3Cp%3Ea%20country%20walk%20and%20a%20good%20dinner%20afterwards,%20what%20else%20do%20you%20need?%3C/p%3E){kind=link}
