%3C/p%3E%3Cp%3ECHICKEN%20ALLA%20CACCIATORA%20a.k.a%20HUNTER%20STYLE%20or%20%20CHICKEN%20CACCIATORE.%3C/p%3E%3Cp%3EI%20spent%20my%20youth%20in%20a%20huge%20house%20overlooking%20my%20hometown%20Perugia.%20My%20parents%20where%20civil%20servants%20and%20in%20their%20free%20time%20took%20care%20of%20the%20large%20garden,%20the%20olive%20trees%20and%20the%20pets.%3C/p%3E%3Cp%3ETo%20be%20precise,%20my%20father%20took%20care%20of%20breeding%20the%20pets%20and%20my%20mother%20fought%20against%20the%20proliferation%20of%20pets.%20We%20had%20a%20dog%20and%20a%20cat%20and%20the%20occasional%20gold-fish%20of%20course.%20Even%20a%20guinea%20pig%20once.%3C/p%3E%3Cp%3EThat%20was%20fine%20with%20my%20mum.%3C/p%3E%3Cp%3EThe%20dog%20and%20the%20cat%20were%20actually%20treated%20to%20pasta%20al%20rag%C3%B9%20just%20like%20us.%20Even%20with%20a%20sprinkle%20of%20Parmesan%20on%20top.%3C/p%3E%3Cp%3EThe%20problem%20was,%20my%20father%20had%20pet%20chickens.%20They%20were%20allowed%20to%20do%20anything%20they%20wanted.%20He%20talked%20to%20them.%20%20They%20kept%20each%20other%20company.%20They%20%E2%80%93%20the%20chickens%20%E2%80%93%20ravaged%20the%20geraniums.%3C/p%3E%3Cp%3EAnd%20planted%20new%20geraniums.%3C/p%3E%3Cp%3ERecipe%3C/p%3E%3Cp%3EUsing%20a%20large%20thick%20bottom%20or%20non%20stick%20pan,%20sear%20chicken%20pieces%20in%20one%20tablespoon%20olive%20oil%20until%20golden%20on%20all%20sides.%20Good%20quality%20chicken%20should%20not%20produce%20any%20fat,%20but%20if%20it%20does%20drain%20it%20and%20wipe%20clean%20the%20pan%20before%20proceeding.%3C/p%3E%3Cp%3ETurn%20heat%20to%20low%20and%20add%20onion%20and%20stir%20frequently%20until%20caramelized.%20%20Add%20minced%20garlic%20cloves,%20capers,%20olives,%20rosemary%20and%20sage%20leaves.%20Season%20with%20salt%20and%20black%20pepper%20to%20taste.%3C/p%3E%3Cp%3EWhen%20everything%20is%20fragrant%20add%20one%20cup%20of%20wine,%20cover%20and%20simmer%20very%20slowly%20until%20the%20chicken%20is%20tender.%20This%20might%20take%2045%20min%20to%201%20and%201/2%20hours%20depending%20on%20size%20and%20quality%20of%20the%20bird.%20Add%20some%20water%20if%20the%20sauce%20gets%20to%20dry%20while%20simmering.%3C/p%3E%3Cp%3EWhen%20ready%20to%20serve%20add%20the%20lemon%20juice%20and%20balsamic%20vinegar.%3C/p%3E%3Cp%3EThis%20dish%20is%20lovely%20with%20a%20side%20of%20steamed%20greens%20dressed%20with%20a%20splash%20of%20lemon%20juice%20and%20fruity%20olive%20oil.%20If%20you%20need%20your%20starch,%20accompany%20it%20with%20homemade%20potato%20puree%20or%20polenta.%20Italians%20would%20never%20serve%20it%20with%20pasta%20or%20rice.%3C/p%3E%3Cp%3EServes%203-4%20depending%20on%20initial%20size%20of%20chicken.%3C/p%3E%3Cp%3Eadd%20the%20wine%20at%20this%20stage,%20when%20all%20other%20ingredients%20are%20fragrant%3C/p%3E){kind=link}
