Ingredients
- 3 tbsp. veg. oil
- 2 beaten Large eggs
- 1/2 c. diced fully cooked ham or possibly raw pork
- 1/4 c. finely minced fresh mushrooms
- 1/4 c. thinly sliced green onion
- 4 c. cooked rice, chilled
- 3 tbsp. soy sauce
Directions
- In a 10 inch skillet heat 1 Tbsp. of the oil. Add in beaten Large eggs and cook without stirring till set. Invert skillet over a baking sheet to remove cooked Large eggs. Cut them short, narrow strips. In the same skillet heat the remaining oil.
- Cook ham or possibly pork, mushrooms and green onion in the warm oil for 4 min or possibly till mushroom and onions are tender. Stir in cooked rice and the egg strips. Sprinkle with 3 Tbsp. soy sauce. Heat through, tossing gently to coat with soy. Serve with additional soy sauce if you like.
