- Bread:
- 1 3/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 8 tbsp (1 stick) unsalted butter, softened
- 1 1/3 cups granulated sugar
- 2 tbsp grated pink grapefruit zest
- 3 large eggs
- 1/4 cup 2% milk
- 3 tsp fresh pink grapefruit juice
- Glaze:
- 3/4 cup powdered (confectionerâs) sugar
- 4 1/2 tsp fresh pink grapefruit juice
- 1/2 tsp grated pink grapefruit zest
- Pinch salt

.%20We%20are%20perfectly%20content%20with%20our%20two%20boys%20and%20are%20determined%20not%20to%20let%20our%20kids%20outnumber%20us.%20When%20I%20was%20pregnant%20%E2%80%93%20several%20years%20ago%20%E2%80%93%20I%20went%20through%20a%20period%20of%20insatiable%20longing%20for%20an%20unlikely%20food%20combination.%20Doritos%20and%20pink%20grapefruit%20juice.%20Not%20just%20Doritos,%20not%20just%20pink%20grapefruit%20juice.%20They%20had%20to%20be%20consumed%20in%20the%20same%20sitting.%20Thinking%20of%20that%20now%20makes%20me%20feel%20like%20a%20foie%20gras%20goose%20after%20its%20daily%20force-feeding.%3C/p%3E%3Cp%3EThankfully,%20pink%20grapefruits%20and%20I%20have%20developed%20a%20much%20healthier%20relationship%20and%20I%20typically%20get%20my%20fill%20of%20the%20citrus%20fruit%20at%20breakfast%20a%20few%20times%20each%20week.%20My%20youngest%20son%20and%20I%20each%20take%20half%20of%20the%20fruit,%20sprinkle%20it%20with%20a%20little%20sugar,%20and%20scoop%20out%20the%20sections.%20The%20most%20anticipated%20treat,%20however,%20is%20squeezing%20out%20every%20last%20drop%20of%20the%20juice%20into%20our%20bowls%20and%20spooning%20it%20into%20our%20eager%20mouths.%3C/p%3E%3Cp%3EAs%20for%20Doritos.%20Well,%20we%20have%20had%20a%20little%20falling%20out,%20mostly%20due%20to%20the%20fact%20that%20they%20were%20sabotaging%20my%20attempts%20to%20fit%20into%20my%20skinny%20jeans.%20Of%20course,%20eating%20three%20slices%20of%20glazed%20quick%20breads%20has%20nothing%20to%20do%20with%20those%20failed%20attempts.%3C/p%3E%3Cp%3EThis%20quick%20bread%20%E2%80%93%20okay,%20cake%20%E2%80%93%20follows%20the%20same%20formula%20as%20my%20Glazed%20Lemon%20&%20Dried%20Cherry%20Quick%20Bread.%20In%20this%20case,%20the%20lemon%20zest%20and%20juice%20are%20replaced%20with%20the%20juices%20and%20zest%20of%20pink%20grapefruits.%20While%20the%20taste%20is%20reminiscent%20of%20a%20lemon%20bread,%20it%20has%20a%20slight%20sweetness%20that%20clearly%20comes%20from%20fruit%20rather%20than%20just%20sugar.%20Served%20with%20a%20cup%20of%20tea%20or%20coffee,%20it%20works%20beautifully%20as%20an%20afternoon%20treat,%20dessert,%20or%20brunch%20offering.%3C/p%3E%3Cp%3EThe%20recipe:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees%20F.%20Grease%20a%208%201/2-%20by%204%201/2-inch%20loaf%20pan%20with%20butter%20or%20cooking%20spray.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20together%20flour,%20baking%20powder%20and%20salt.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20stand%20mixer%20(or%20a%20large%20bowl,%20using%20a%20hand%20mixer)%20set%20on%20a%20medium%20speed,%20beat%20together%20butter,%20sugar%20and%20grapefruit%20zest%20until%20light%20and%20fluffy,%204%20to%205%20minutes.%20Add%20eggs,%20one%20at%20a%20time,%20beating%20to%20combine%20after%20each%20addition.%3C/p%3E%3Cp%3ETurn%20the%20mixer%20to%20low%20and%20gradually%20add%20the%20flour%20mixture,%20milk%20and%20grapefruit%20juice.%20Beat%20until%20just%20combined.%20Take%20care%20not%20to%20overbeat%20or%20the%20bread%20will%20be%20tough.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20prepared%20pan%20and%20level%20with%20a%20spatula.%3C/p%3E%3Cp%3EBake%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20with%20only%20a%20few%20crumbs%20attached,%2050%20to%2060%20minutes.%20Let%20the%20bread%20sit%20in%20the%20pan%20for%2010%20minutes.%20Run%20a%20knife%20around%20the%20outside%20and%20turn%20the%20pan%20upside%20down%20to%20release%20the%20bread.%20Let%20cool%20on%20a%20wire%20rack%20for%201%20hour,%20then%20glaze.%3C/p%3E%3Cp%3EGlaze:%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20together%20powdered%20sugar,%20grapefruit%20juice%20and%20zest,%20and%20salt%20until%20combined.%20Drizzle%20over%20cooled%20quick%20bread.%3C/p%3E%3Cp%3ESlice%20and%20serve.%3C/p%3E%3Cp%3EOther%20citrus%20quick%20breads:%3C/p%3E%3Cp%3EBread:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees%20F.%20Grease%20a%208%201/2-%20by%204%201/2-inch%20loaf%20pan%20with%20butter%20or%20cooking%20spray.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20together%20flour,%20baking%20powder%20and%20salt.%20In%20the%20bowl%20of%20a%20stand%20mixer%20(or%20a%20large%20bowl,%20using%20a%20hand%20mixer)%20set%20on%20a%20medium%20speed,%20beat%20together%20butter,%20sugar%20and%20grapefruit%20zest%20until%20light%20and%20fluffy,%204%20to%205%20minutes.%20Add%20eggs,%20one%20at%20a%20time,%20beating%20to%20combine%20after%20each%20addition.%3C/p%3E%3Cp%3ETurn%20the%20mixer%20to%20low%20and%20gradually%20add%20the%20flour%20mixture,%20milk%20and%20grapefruit%20juice.%20Beat%20until%20just%20combined.%20Take%20care%20not%20to%20overbeat%20or%20the%20bread%20will%20be%20tough.%20Pour%20the%20batter%20into%20prepared%20pan%20and%20level%20with%20a%20spatula.%3C/p%3E%3Cp%3EBake%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20with%20only%20a%20few%20crumbs%20attached,%2050%20to%2060%20minutes.%20Let%20the%20bread%20sit%20in%20the%20pan%20for%2010%20minutes.%20Run%20a%20knife%20around%20t
