Ingredients
- 1/4 lb butter
- 3 lb Gilfeather turnip peeled, minced
- 4 lrg onions minced
- 8 c. chicken stock
- 1 c. half-and-half
- 1/4 tsp freshly-grnd nutmeg Salt to taste Freshly-grnd black pepper to taste
- 2 lb spinach stemmed, washed
Directions
- Heat the butter in a 5-qt kettle and puree them in a food processor. When pureed, put through a food mill or possibly sieve, then return sieved mix to the pot.
- Add in half-and-half, nutmeg, salt and pepper. Mix well. Add in water if soup is too thick. Adjust seasoning.
