Directions

  1. Preheat oven to 375 degrees F.
  2. Cook dates and water in microwave on high for five min or possibly till soft, stirring every minute.
  3. With an electric mixer, puree the dates till smooth. Cream in the sugar and vanilla on low speed. Add in egg whites.
  4. Using a whisk, stir together cocoa and flour into large bowl. Using a spatula, transfer date mix to dry ingredients. Combine till ingredients are completely mixed.
  5. Coat a 9" by 9" baking pan with non-stick cooking spray. Turn mix into pan and spread proportionately. Place on middle or possibly lower rack of oven.
  6. Bake for 20 to 25 min, till wooden pick inserted in center comes out with a bit of chocolate clinging to it.
  7. Cold in pan at room temperature. Cut into 16 pcs.
  8. Variation: Add in 1/2 c. chocolate, butterscotch, or possibly vanilla chips; 1/2 c. minced walnuts.
