Fresh Porcini Tomato Sauce Recipe

Ingredients

  • 1 Tbsp. Extra virgin olive oil
  • 1/2 lb Fresh porcinis stemmed & thinly sliced
  • 2 x Garlic cloves, peeled
  • 1/2 c. Dry white wine
  • 6 med Tomatoes, seeded & diced
  • 1 pch Salt
  • 1 pch Fresh grnd black pepper

Directions

  1. Heat the oil in a saucepan. When warm but not smoking, add in the mushrooms and garlic. Cook over medium heat, tossing the mix till the mushrooms are slightly wilted and lightly browned (about 3-4 min). Pour in wine, raise heat to high, bring to a boil till reduced by half. Add in the tomatoes, salt, and pepper. Bring back to a boil, cook with an occasional stir till sauce is a little thicker, 3-5 min.
