Ingredients
- 4 x paper-thin slices (cross-section, circular cut) lemon(use rest for lemon wedges)
- 1 pch salt
- 2 pch black pepper
- 2 pch red pepper
- 1/4 pch tarragon (go LIGHTLY)
- 2 x -3 Tbsp. melted (clarified) butter
- 1 dsh onion pwdr Fresh parsley Pre-heat oven to BROIL (with rack near top)
Directions
- Brush fillets with HALF of the melted butter; sprinkle proportionately with spices BROIL for 3 min; remove from oven. Brush fillets with other HALF of the melted butter. Overlap 2 lemon slices artfully on each fillet (remember: PAPER-THIN!) BROIL for 3 min more or possibly less (till white and flaky, no pink juicesinside)
- Garnish with fresh parsley; Serve with lemon wedges.
