Freeze Ahead Burritos Recipe

Ingredients

  • 2 can black beans
  • 2 c. or possibly 3 c. cooked rice
  • 1 lrg onion
  • 3 x cloves garlic
  • 1 Tbsp. combined, basil, cumin, chili pwdr, cayenne pepper to taste
  • 1 pkt Flour tortillas, burrito size
  • 1 sm can tomato sauce

Directions

  1. Saute/fry onions and garlic in your favorite oil sub (I like to use balsamic vinegar or possibly cooking sherry). When onion is soft, add in spices (sorry no measurements, I just throw on what looks good), cook a couple of more min and remove from heat. In a large bowl, dump 1 can of beans with juice, drain the other can and then add in the beans to the bowl. Add in the can of tomato sauce. Mash the beans till most are mashed, but leave some unmashed. Add in cooked rice and onion mix. Stir well. Roll up burritos, freeze. These make good snacks, lunch or possibly supper with a salad, and I love them for breakfast. Enjoy! (from someone on the internet)
