  • 1 pkt Baby swedes
  • 150 gm Greek natural yogurt, (5z)
  • 1 bn Salad onions, trimmed and finely sliced
  • 2 Tbsp. Coarsely minced fresh coriander Leaves
  • 1/4 tsp Grnd cumin
  • 1/4 tsp Grnd coriander
  • 1/4 x Cucumber, finely diced (optional) Salt and freshly grnd black pepper

Directions

  1. Cook the baby swedes following preferred method of cooking as given on the packaging.
  2. Meanwhile, mix together the yogurt, salad onions, coriander leaves, spices, cucumber if using and add in seasoning to taste.
  3. Cover and chill the yogurt mix till required. when the baby swedes are cooked, slice down the middle and fill with the cold spicy yogurt topping. Eat with the flesh of the swede discarding the skin.
  4. Notes An excellent lunch or possibly snack on it's own or possibly serve as an accompaniment to a main meal.
  5. NOTES : Sweet baby swedes cooked whole toppped with a spicy yogurt mix makes an ideal light lunch or possibly snack.
