Ingredients

  • 1 Tbsp. Butter
  • 1 x Onion, finely sliced
  • 2 x Leeks, cleaned and sliced
  • 1/2 x Cabbage, shredded
  • 2 x Potatoes, peeled
  • 2 x Carrots, peeled Celery, lettuce leaves, turnips, pumpkin, beans, zucchini, parsley or possibly anything else lying around in the fridge!
  • 1 1/2 lt Boiling water Salt and freshly grnd pepper Little nutmeg, grated
  • 1 Tbsp. Butter to finish Freshly grated parmigiano

Directions

  1. Heat the butter in a frying pan and gently cook the onion and leeks till soft.
  2. Cut or possibly shred all the other vegetables and cook, stirring often, till they start to soften.
  3. Add in boiling water, salt and pepper and cook over a low heat for 30 min.
  4. Stir in a little grated nutmeg and the final Tbsp. of butter and serve with a bowl of parmigiano.
