Ingredients

  • 3 lrg Navel oranges - (perfect)
  • 1 med Red onion
  • 2 Tbsp. Blanched sliced almonds
  • 1/2 tsp Sugar
  • 3 Tbsp. Red wine vinegar
  • 6 Tbsp. Extra-virgin extra virgin olive oil
  • 9 x Wine grapes
  • 2 x Scallions sliced lengthwise, paper thin Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Remove peel and pith from oranges and slice into 1/8-inch slices and lay on platter. Slice red onion paper thin and lay rings over oranges. Sprinkle almonds over oranges.
  2. In a small bowl, whisk together sugar, vinegar and oil to emulsify, and pour over salad. Sprinkle with wine grapes and scallions and season lightly with salt and pepper.
  3. This recipe yields 4 servings.
