Ingredients

  • 2 Tbsp. Minced fresh thyme (or possibly 2 tsp. dry thyme)
  • 1 Tbsp. Minced fresh sage (or possibly 1 tsp. dry sage)
  • 2 tsp Salt
  • 1 tsp Black pepper, freshly grnd
  • 1/4 tsp Grnd allspice or possibly cloves
  • 2 x Garlic cloves chopped

Directions

  1. Combine all ingredients in a small bowl. To use, rub the pork lightly with oil before proportionately coating it with the marinade. Let the pork stand for at least 1 hour, or possibly cover and chill for several hrs before cooking.
  2. Made with fresh herbs, this marinade will keep if refrigerated, tightly covered, up to 3 days. Made with dry herbs, it will keep, stored airtight in a cupboard, for several weeks.
  3. This recipe yields about 1/4 c. marinade if made with fresh herbs.
