Directions

  1. Cut deer meat into large pcs, brown quickly in butter. Add in warm sherry. Remove meat from pan. Place onions in pan and brown quickly. Cut each mushroom into 3 pcs, add in to onions, cook for 1 minute. Add in tomato paste, stirring till smooth. Add in beef broth and 1/2 c. red wine. Add in browned meat and herbs, cook slowly till tender. About 2 hrs.
  2. Add in remaining red wine while cooking. Boil the potatoes and cut them up, add in to the stew about 20 min before serving.
