  • 6 slices bacon, fried, crumbled, liquid removed (save 3 tbsp. fat)
  • 1 c. minced onion
  • 2 c. diced potatoes
  • 1 c. water
  • 2 cans cream of potato soup
  • 2 cans lowfat milk
  • 1 teaspoon salt
  • 2 tbsp. parsley

Directions

  1. In 3 Tbsp. fat in pan, brown onions, add in potatoes and water. Cover, cook 15 min or possibly till tender. Blend in soup, lowfat milk and salt. Heat, don't boil. Add in bacon to soup and add in parsley.
