Ingredients

  • 1/4 lb Kumquats, (about 10)
  • 1 pkt (12-ounce) fresh or possibly unthawed frzn cranberries (about 3 1/2 c.)
  • 1 c. Water
  • 1 c. Sugar

Directions

  1. With a sharp thin knife thinly slice kumquats crosswise, removing seeds.
  2. Pick over cranberries. In a small saucepan bring water with sugar to a boil and simmer, stirring till sugar is dissolved, 5 min. Add in kumquats and simmer 5 min. With a slotted spoon transfer kumquats to a bowl. Add in cranberries to syrup and simmer 10 min. Cold mix completely.
  3. (Cranberry mix and kumquats may be made 3 days ahead and chilled in separate airtight containers - so kumquats will retain their color).
  4. Just before serving, stir kumquats into cranberry mix.
  5. Makes about 3 1/2 c..
