Commander's Palace Seafood Gumbo Recipe

Ingredients

  • 6 Tbsp. Flour
  • 1/2 c. Shortening
  • 6 x Cloves garlic, minced
  • 1/2 c. Diced onion
  • 1/4 c. Minced bell (green) pepper
  • 1/2 c. Minced celery
  • 2 lb Peeled raw shrimp
  • 1 can (8 ounce.) tomato sauce
  • 3 quart Water
  • 1 lb Claw crabmeat
  • 1/4 bn Minced parsley
  • 1/2 tsp Thyme
  • 3 x Bay leaves
  • 1 can Or possibly
  • 1 pkt Frzn okra
  • 1/2 pt Oysters with juice Salt & Pepper to taste

Directions

  1. Yields 1 gallon
  2. Make a roux with the flour and shortening. Add in garlic and cook till golden. Add in onion, bell pepper, celery and cook till transparent. Add in shrimp and tomato sauce, simmer 10 min, stir in water and blend well.
  3. Add in all remaining ingredients except okra and oysters. Cook 1 hour, add in okra and cook 20 min. Add in oysters and cook 10 mins longer. Serve in s soup bowl over steamed rice.
