Ingredients

  • 6 ounces dried soba noodles
  • Salt
  • ½ cucumber, peeled, seeded, and julienned
  • 3 tablespoons minced red onion
  • 1 ½ tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 ½ tablespoons soy sauce
  • Juice of ½ a lime
  • Pinch of light brown sugar
  • 2 teaspoons white or black sesame seeds
  • 1 tablespoon minced chives
  • ½ ripe avocado, cut into ¼-inch thick slices
  • Optional: dollop of sambal oelek chili paste
