  • 2 boxes Jiffy Cornbread Mix
  • 3 Large eggs
  • 2/3 c. lowfat milk
  • 1 6 ounce can chipotle peppers, liquid removed, minced
  • 1 Tbsp. pimento peppers
  • 1 can cream corn
  • 1 minced white onion
  • 1/2 c. vegetable oil
  • 1 c. grated cheese, any kind

Directions

  1. Combine all of the ingredients in a large mixing bowl.
  2. Let mix rest for about 10 min.
  3. Bake at 450 until a toothpick comes out clean and the top springs back to the touch.
