Chinese White Chicken Recipe

Gong xi fa cai! or Gong hey fat choy! to all my Chinese friends! (I hope I didn't butcher the greetings) I hope everyone had a blast celebrating last week. Chinese cuisine is definitely our family's favorite and White Chicken is one of our "default orders" every time we dine in Chinese resto. Hope you'll enjoy this basic white chicken recipe with ginger sauce ^_^

Ingredients

  • 4 Chicken quarters (you can use whole chicken if you like)
  • 8 cloves garlic crushed
  • 1 medium sized ginger peeled
  • salt
  • 1 tsp wansuy leaves (or scallion) chopped finely
  • 1 cup vegetable oil

Directions

  1. rub salt all over chicken. (it's ok to go crazy on this ^.~)
  2. chop off about 1/4 of your ginger. cut it to 4pcs and crush.
  3. put chicken, garlic and ginger on a pot. Add water til all chicken is submerged. Bring to boil.
  4. Let it boil for another 30mins. You can prepare ginger sauce while waiting
  5. heat oil on a separate pan. Grate ginger with the finest grater you got.(put it in a container that can withstand high heat like a stainless or fiberglass bowl)
  6. add wansoy to ginger and pinch of salt.
  7. add the heated oil to ginger (BE CAREFUL!)
  8. plate your chicken and serve ^_^

    oil should depend how much grated ginger you were able to make. If you were able to produce 1/4 cup of ginger your oil should be 1/4 cup just add more if it looks dry.
