Ingredients

  • 3 x Large eggs
  • 2 Tbsp. Minced herbs, eg parsley, chervil
  • 4 x Spring onions, white part only
  • 1 x Mackerel fillet Flour for dredging
  • 1 x Egg, beaten
  • 50 gm Couscous Knob butter Extra virgin olive oil

Directions

  1. Preheat the oven to 200c/400f.
  2. 1 Whisk the Large eggs in a bowl with the herbs. Heat the butter in a small frying pan, and pour in the Large eggs. When set, flip over. Heat a little oil on a griddle pan, and add in the spring onions. Grill all sides.
  3. 2 Dredge the fish in some flour, dip in the beaten egg and coat with couscous. Grill in the same pan, and transfer to the oven for 5-10 min. Serve on the pancake with the spring onions.
